Barbecue Burgers With Sweet Chili Mayo

Barbecue Burgers with Sweet Chili Lime Mayo!
There’s something irresistible about a juicy barbecue burger — smoky, savory, and perfectly grilled. However, this version elevates the experience to the next level with a Sweet Chili Lime Mayo that strikes the perfect balance of tangy, creamy, and slightly spicy flavors.

Perfect for summer cookouts, family gatherings, or whenever you want to impress your guests with something unforgettable.

  Ingredients

For the Burgers:

  • 1 lb (450g) ground beef (80/20 for juiciness)

  • 2 tbsp barbecue sauce (plus extra for basting)

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • Salt and freshly ground black pepper, to taste

  • 4 burger buns

  • 4 slices cheddar cheese (optional)

  • Lettuce, tomato slices, red onion, and pickles — for serving

For the Sweet Chili Lime Mayo:

  • ½ cup mayonnaise

  • 2 tbsp sweet chili sauce

  • 1 tsp lime zest

  • 1 tbsp fresh lime juice

  • Pinch of salt

Instructions

  1. Make the Sweet Chili Lime Mayo
In a small bowl, whisk together the mayonnaise, sweet chili sauce, lime zest, lime juice, and a pinch of salt.
Taste and adjust with more lime juice or chili sauce if desired.
    Refrigerate until ready to serve.

  2. Prepare the Burger Patties
In a large bowl, combine ground beef, barbecue sauce, smoked paprika, garlic powder, salt, and pepper.
Gently mix until just combined (don’t overwork the meat).
    Shape into 4 even patties.

  3. Grill or Pan-Sear the Burgers
Preheat your grill or skillet over medium-high heat.
Cook the patties for about 4–5 minutes per side, basting lightly with barbecue sauce during the last minute.
Add cheese slices in the final minute and let them melt.

  4. Toast the Buns
Lightly toast the burger buns on the grill or in a pan until golden brown. This adds flavor and prevents sogginess.

  5. Assemble the Burgers
Spread a generous layer of Sweet Chili Lime Mayo on both bun halves.
Add lettuce, burger patty, tomato, onions, and pickles.
Top with the bun and press gently.

    Tips for Extra Flavor

    • Mix a bit of chopped cilantro into the mayo for a fresh twist.

    • Try smoked gouda instead of cheddar for a deeper flavor.

    • Make it spicy: add a few drops of sriracha to the mayo.

      Why You’ll Love It

This burger has that perfect sweet, smoky, and tangy balance that keeps you coming back for another bite. The Sweet Chili Lime Mayo is the star — it adds a vibrant zing that turns a simple burger into something truly special.
